Jicama Salad and Good Friends

My homeschool group met this afternoon. It was a small group today but so very nice. I am so honored to know these women and their children. Not only have we shared our joys and fears with homeschooling, but this remarkable group of women have become my friends. It's been one of my greatest joys, to form this group. Today, Lisa knitted me another dish cloth for my house, my friend Linda is watching my children on Monday while I am away for the day and my friend Karen brought me Jicama, limes and cilantro so that I can make the salad I told her I adored on a recent playdate. She also brought me a magazine called Mary Jane's Farm and I spent the afternoon browsing her Hobby Farms magazine (I will be ordering this magazine too). In turn, I gave them fresh eggs and some homemade Violet jelly which we all were able to taste today on some whole wheat bread. It was such a lovely afternoon and I didn't want it to end. I thought I would share the recipe for the Jicama salad. Thanks so much Karen!
Jicama Salad
1 large Jicama
2 limes
Cilantro
pinch of salt


Peel the Jicama and then slice.

Julienne the pieces.

Add the juice of the two limes.
Add some chopped Cilantro to taste with the pinch of salt.
Toss it all together and enjoy. That's it! Wasn't that Easy?

I'm jealous of your homeschool group day.
We have been missing out on ours, the timing and some other things..have been off lately.
